I made my own homemade pizza sauce with a couple of Roma tomatoes, 1 onion and a couple of garlic cloves. I let these three items cook in the oven for about 1.5 hours. I also made my own dough for the first time. I used a recipe that my friend Bethany gave me. This is where the fun begins. Have you ever made pizza dough before? If not, you at least have seen the guys at the pizza shop toss the dough around...well, I started off by not necessarily purchasing quick-rise yeast = PROBLEM #1.
Whole Foods didn't have quick-rise yeast, so a nice lady in the bakery gave me some of there's au gratis. Only thing is I didn't have any instructions for it - she just put it in a plastic container for me, so I just assumed it would follow the instructions my friend gave me = PROBLEM #2. When I first made the dough it felt dry, I remember the lady in the store said to add 2 cups of warm water - contradictory to my friends recipe which called for 1 cup of warm water. I added 1 cup of water and let it sit for 10 minutes...nothing happened, so I added another 1/2 cup of water = PROBLEM #3. The dough turned SLIMY!!! I added more flour to balance the slimy dough. I covered it to let it rise again, after 1 hour it rose...so much for quick-rise! It was still all the wrong consistency. I had to eat my pizza like pie, the dough was really thick and wasn't really cooked through. :(
Now for the pizza...the sauce was good - after roasting the tomatoes, onion and garlic I put it in a food processor to make it into a sauce. I spread it over my failed dough and added the toppings - goat cheese, kalamta olives and basil. Can we say DELISH?!?!?! That combo of toppings tasted SOOO good. Next time when I get the dough right it will be a really good meal!
Your a trooper, Because as much as I like the idea, and the "fun" of dough from scratch....Trader Joe sells ready to roll Pizza Dough in wheat, white, and spinach. I LOVE IT, as a matter of fact better put that on the grocery list for next trip, YUM. Toppings sound great, maybe some pesto blended in the sauce?
ReplyDeleteI was at Whole Foods for dough and it was WAAY cheaper to just make it myself. I will def hit up TJ's the next time. Pesto sounds like a good adddition to the sauce!

ReplyDeletePizza dough is SUPER easy (we make pizza all the time with the girls). Okay, here are my tips. I use 2 cups of warm water. Dissolve 3 tbsp of sugar in the warm water. I use two packets of rapid rise yeast (mainly because we usually end up making two or three pizzas). Dissolve the yeast in the sugar water. Let it sit for about 10 minutes until it's frothey. It will get a THICK frothy head if the water is the right temp (hot to the touch but not scalding). Pour the yeast/water mixture in the bowl and then add flour about a 1/2 cup at a time until the dough is the consistancy you want. The best way I've found to let the my dough rise is to put it in the oven on the top rack(do NOT turn the oven on, LOL) with a small pot of boiling water on the lower rack. The dough will double pretty rapidly. Knead as desired and add your toppings. Wow, that turned out longer than I expected. Anyway, happy pizza making!
ReplyDeleteThanks Adrienne, I think I just need to be sure to get PACKAGED quick-rise yeast. My friend also suggested I let it rise in the oven...I'll catch on eventually, lol!
